The process of protecting the name Lički skripavac started in December 2017, when The Association of Small Cheesemakers of the Lika-Senj County "Lički skripavac" has submitted a request to the Ministry of Agriculture for the protection of the geographical indication origin called "Lički skripavac".
Lika skripavac is a soft, fatty cheese with a cylindrical or quadrangular shape. On the surface, it is milky-white in color without a rind, and on cross-section it is closed or with a smaller number of mechanical openings created by the retention of whey during cheese molding. Its taste is milky-sweet and moderately salty, and the consistency is characteristically rubbery and squeaks during consumption. The method of production of Lika skripavac was passed down from generation to generation and has been preserved until today, and the squeaky property, which gave this cheese its name, occurs due to the high proportion of milk fat and protein in the milk, which is a consequence of the specific way of feeding cows in this area .
The production of Lika skripavac is allowed only in the geographical area of Lika from the milk of cows raised in that area. The production area is located in three administrative regions, mostly in Lika-Senj County, and to a lesser extent in Zadar and Karlovac Counties.
